Unveiling BOCA’s Blended Whisky

SHERRY 101

BOCA is joining more than 1,000 outlets from 30 countries from all over the world to celebrate International Sherry Week 2019. A celebration of the best of Jerez that runs from November 4 to 10, 2019 (see https://www.sherry.wine/sherryweek.)

Sherry is one of Spain’s most famous, yet most mysterious beverages. It’s what sommelier’s drink when they’re off-the-clock, and also probably what your grandma used to drink in her hay-day. BOCA & our partners The Tasting Class will host a Sherry 101 tasting on NOVEMBER 6th from 7:30 PM to 10:00 PM.

We explain what’s so special about how this wine is made, aged,  where it comes from (Jerez, Spain) and explore several classic dry and sweet styles. The evening includes a welcome cocktail made with sherry, a sommelier guided tasting of four sherries and some light Spanish nibbles for AED 300.

We have produced more plastic in the past 10 years than in the entire last century, 50% of which is considered ‘un-recyclable’, with an estimated 8 million tons ending up in the ocean annually affecting both sea life and human health alike.* At BOCA we recognize that tackling ocean conservation is more pressing than ever, and along with our friends and partners, we invite you for a night dedicated to this cause.

On November 27th join us as we host Jo Ruxton, producer of the multi-award-winning film ‘A Plastic Ocean’ and founder of the Plastic Oceans Foundation. Screening a twenty minute version of her 2016 documentary, the night will include a reception with sustainable movie snacks and beverages, followed by a zero waste dinner drawing attention to lesser known local produce and maximizing usage of our food paired with environmentally-conscious drinks.

Sponsored by MMI and 10th International, a family run organization dedicated to help tackle ocean pollution through the generation of funds to key environmental projects, the evening will also include an exhibition by local environmentalist Mariska Nell of Waste Me Not. We will also introduce our friends from the private equity firm PURE CE who aim to solve some of the world’s pressing environmental challenges through new technological investments, along with Kathrin Gnilka of 1001 Good Deeds; BOCA’s sustainability and climate-change awareness training partner.

We also invite you to join the beach clean-up scheduled to take place on the same day in associate with Dubai Creek Club and the local non-profit marine conservation organization Azraq.

Off the Menu – The Emirati Edition

Taking place from the 12 to 26 October 2019, part three of Off the Menu – The Emirati Edition will continue at BOCA with Head Chef, Matthijs Stinnissen collaborating with Emirati Chef Khaled Al Saadi for an Emirati and Mediterranean inspired set menu.

Dubai International Financial Centre (DIFC), the city’s most pioneering culinary destination, is celebrating the origins of Emirati cuisine with a curated dining experience that will see local flavours elevated into a fine-dining setting.

Head Chef, Matthijs Stinnissen has previously gained his culinary experience at 1, 2 & 3 Michelin star restaurants in the Benelux region, including some of “The World’s 100 Best Restaurants” establishments. Emirati Chef Khaled trained in many five star restaurants around Dubai including Gordon Ramsay’s Breadstreet Kitchen and is currently posted in Ossiano, Atlantis the Palm where he continuously creates new menus and recipes.

The Emirati and Mediterranean inspired set menu will consist of six delectable courses including local Quail soup, Hammour tacos, Arroz con Carne and Camel milk ice-cream to name a few. The menu will be paired with a Virgin Sangria and will be priced at AED 295 per person.

JEAN LEON
The story of Jean Leon is that of a 19-year-old from Santander, Spain who went to New York where he worked as a cab driver, a busboy, and a waiter at Frank Sinatra’s restaurant. There he met the biggest stars from Paul Newman and Marilyn Monroe to Zsa Zsa Gabor and James Dean. With the latter, he opened La Scala in Beverly Hills. MARILYN’S LAST MEAL
Jean Leon was a confidante of Hollywood heavyweights of the time and had many personal encounters with them; the most delicate being the last night of Marilyn’s life (August 5th, 1962). Marilyn most likely called him because she wanted to dine at home and he personally delivered one of her favorites: Fettuccini. In fact, every dish on the menu in his restaurant was named after a star.  One of the most memorable was, of course, the “Fettuccini Marilyn” which, as one might expect, President John Fitzgerald Kennedy was particularly fond of…

For BOCA’s fifth year anniversary we have re-imagined a four-course menu from La Scala Restaurant had Marilyn decided to dine in rather than take out that night in 1962. Could things have ended differently?

Dishes will include Frank’s Foie Salad with haricots beans and truffle vinaigrette, Fettuccini Marilyn with clam & mussel velouté, and Striploin Tagliata a la Zsa Zsa with sun-dried heirloom tomato and Manchego cheese, all paired with recent vintages from Jean Leon’s estate in Penedès, Spain.

A celebration of succulent meats and bold Malbecs straight from the foothills of the Andes, from forever-sunny Mendoza and the Uco (Ew-coh) Valley.

Familia Zuccardi invites you to an Argentinian takeover of BOCA serving up ceviches, empanadas and gaucho-sized portions of grilled ‘Asado’ featuring barbequed short beef ribs, chorizo, steaks and slow-cooked lamb. There will also be a special plant-based ‘Asado’ of glazed celeriac, local kohlrabi, heritage carrots, roasted cauliflower and scorched Padron peppers followed by a finale of a mighty black chocolate block and cherry compote.

Nicolás Angelini of Zuccardi’s Valle de Uco (just awarded Best Vineyard in South America and the World*) will guide us through four native varieties and will explain the meticulous care the family puts towards sustainability and the respect for soil, air, flora, fauna, and the community the vineyard is built on. BOCA has also put together a guided juice pairing option with matching aromatics and cordials.

BOCA – ZUCCARDI DINNER – 02OCT2019 – MENU

TASTE OF THE GULF

For one night only, BOCA, The Zonin Family’s Rocca di Montemassi and FishFarm are proud to host Bahraini Chef Tala Bashmi on February 12th for a collaboration dinner honoring ingredients and recipes from the Arabian Gulf.

Chef Tala Bashmi, Chef de Cuisine at Fusions restaurant in the Gulf Hotel in Bahrain, shares the same intense love of local ingredients and culinary techniques with the team at BOCA, and will be joining Chef Matthijs Stinnissen, Head Chef of BOCA, to create a four-course sharing menu that celebrates just that.
The collaboration dinner will focus on fish and vegetable varieties native to the Arabian Gulf and will use a mix of new and old recipes and techniques from the region.

The menu will also feature carefully paired grapes from Zonin’s Rocca di Montemassi, introduced by their brand ambassador, Fraser Jones, along with BOCA’s team of sommeliers. BOCA has also put together a guided juice pairing option with matching aromatics, consommés, cordials and teas.
