For the first time in Dubai, BOCA welcomes Dario Poddana, one of the early voices who helped shape what the world now calls the natural wine movement. Together with The Terroirs Project by Les Caves de Pyrene, we present a thoughtful evening dedicated to wines made with integrity, restraint, and respect for the land.

The Terroirs Project was created to reduce the harmful impacts of chemicals and pesticides in viticulture, working only with growers committed to organic farming and minimal intervention. These wines are naturally fermented, made with indigenous yeasts, produced with little or no sulphur, and are suitable for vegetarians and vegans. Above all, they are wines that express where they come from, not a style imposed in a cellar.

Dario’s career reflects this ethos. A British-Italian born in Germany, he began in food, wine, and culture, contributing to the creation of initiatives such as Slow Food International, Terra Madre, Cheese, and The Big Hall of Taste. After years working in Piedmont with Barolo producers, his path led him to Les Caves de Pyrene in 2005, long before the term “natural wine” had clear definition. His work championed growers who honored tradition, biodiversity, and authenticity at a time when these ideas sat outside the mainstream.

Today, Dario leads The Terroirs Project, an initiative that collaborates with prominent growers worldwide to craft wines that are low-intervention, terroir-driven, fresh, and approachable for a new generation of curious drinkers.

On 17 December, BOCA will host a full-restaurant takeover with Dario for a Natural Wines Evening. Over two and a half hours, guests will explore a range of wines poured table-to-table, alongside a sharing-style tapas menu from our kitchen. This format is intentionally informal and generous wines will be poured until stocks run out, encouraging conversation, curiosity, and discovery.
