BOCA introduces a special menu featuring a prized micro-seasonal ingredient from Palestine and the Levant currently in bloom.

In our ongoing commitment to unearth hidden yet treasured ingredients from the region and to share stories of community and resistance through food, BOCA is highlighting Akkoub in a limited-time menu.

ABOUT AKKOUB
Akkoub ŰčÙƒÙˆŰš is an artichoke-like thistle plant (Gundelia or Tumble Thistle) that’s been foraged, wild-harvested and part of Palestinian, Jordanian, and Levantine cuisine for generations. In 2005, the Israeli Nature Authority enforced a ban on foraging Akkoub, making the act of harvesting it a criminal offense punishable by fines and imprisonment. Foragers are conservationists by nature and are in tune with the earth, knowing where to harvest and how much to keep regenerating. Since the ban, Akkoub has become more than just about cuisine; it has become about land and other basic rights of Palestinians. Today, it’s a symbol of resistance, culture, hope, survival, and community.

ABOUT ‘ANDEK AKKOUB?’
Our menu is a collaborative effort with ‘Andek Akkoub?’ (translated as ‘do you have Akkoub?’), an educational initiative led by Janine Kaselitz, a justice for nature advocate, and illustrated by Radina Galabova.

As the permitted amount of picking is limited to 5kg per person, Palestinians started their own micro economy selling Akkoub in villages, and ‘andek Akkoub?’ becomes the golden question to ask whether anyone has any of this sacred plant left. SEASONAL AKKOUB MENU
BOCA’s Chef Patricia Roig has meticulously crafted a limited-time four-course menu featuring Akkoub in three dishes: AKKOUB MOUTABAL with homemade artichoke bread, pomegranate, pickled chili, sumac, and fresh herbs; AKKOUB in ‘ESPARRAGAO’ with beef pancetta, sunchokes, and a traditional Andalusian garlic, paprika, and almond dressing; and AKKOUB & LAMB STEW made with roasted lamb shoulder, cannellini beans, and spring onions.

The story of Akkoub doesn’t end with this meal. You can get your hands on one of the limited ‘Andek Akkoub’ hand embroidered t-shirts. The t-shirt serves as a conversation starter to tell the story of a wild plant native to Palestinian land but forbidden to be foraged. A story about both, Palestinians and Akkoub who are deeply rooted to their land, yet not free to live off it. A story about care, family traditions, resilience, and love.

The four-course Valentine’s Day menu includes ‘Dibba Bay Oysters’ served with our signature tomato dressing, local beetroot, and seaweed, followed by ‘Gambas al Ajillo’ featuring gulf shrimp, garlic, chili, and artichoke cream. For sharing mains, choose from a ’Butterflied Gulf Seabream’ with sweet potato puree, samphire and warm vinaigrette or a ‘Grilled Grass-Fed Angus Ribeye’ with sweet potato puree, and confit pearl onions.

Couples are also invited to opt for the vegetarian menu that includes the restaurant’s ‘Ice Packed Manzanilla Olives’ stuffed with lemon & calamansi, followed by ‘Superfoods & Dessert Plants’ made with organic quinoa & amaranth. PLANT A MANGROVE TREE
In partnership with the local marine conservation nonprofit Azraq, BOCA will plant a mangrove tree on behalf of each couple, accompanied by a personalized certificate card. Your act of planting a baby mangrove tree contributes to the restoration of the UAE’s mangrove forests, storing four times more carbon than the Amazon rainforests. Mangroves serve as a sanctuary for wildlife, fostering a vibrant underwater ecosystem and aiding in mitigating climate change.

KAYAKING TRIP IN JUBAIL MANGROVE PARK
Valentine’s doesn’t stop there – enjoy a one-hour guided tour of the Jubail Mangrove Park in Abu Dhabi on either two single or a double sit-on-top kayak at a day and time of choice. ABOUT Champagne Vilmart & Cie
This is a champagne family house that now spans 6 generations. It was founded in 1890 by the 1st generation, Désiré Vilmart. It is now run by the 5th generation, Laurent Champs, who has been supported for over 3 years by his son, Thomas Champs.

One of the great particularities of the Vilmart house is that all the vinification is carried out under wood, either in foudre (for non-vintage cuvées) or in barrel (for vintage cuvées). All cuvées are vinified for 10 months in oak barrels (from harvest to bottling, which takes place in July).

Another particularity of this operation is that they do not carry out malolactic fermentation, in order to retain the freshness and finesse of their wines. Their philosophy has always been to let their cuvées age for a long time, in order to develop complexity and aromatic richness.

The 11-hectare vineyard is mainly located in the commune of Rilly la Montagne, with only a few plots in the neighboring village of Villers Allerand. The entire vineyard is located 800 meters from the house and is certified HVE (Haute Valeur Environnemental) and VDC (Viticulture Durable en Champagne).
