ABOUT Champagne Vilmart & Cie
This is a champagne family house that now spans 6 generations. It was founded in 1890 by the 1st generation, Désiré Vilmart. It is now run by the 5th generation, Laurent Champs, who has been supported for over 3 years by his son, Thomas Champs.
One of the great particularities of the Vilmart house is that all the vinification is carried out under wood, either in foudre (for non-vintage cuvées) or in barrel (for vintage cuvées). All cuvées are vinified for 10 months in oak barrels (from harvest to bottling, which takes place in July).
Another particularity of this operation is that they do not carry out malolactic fermentation, in order to retain the freshness and finesse of their wines. Their philosophy has always been to let their cuvées age for a long time, in order to develop complexity and aromatic richness.
The 11-hectare vineyard is mainly located in the commune of Rilly la Montagne, with only a few plots in the neighboring village of Villers Allerand. The entire vineyard is located 800 meters from the house and is certified HVE (Haute Valeur Environnemental) and VDC (Viticulture Durable en Champagne).
