This Día de Muertos or Day of the Dead, we invite you to a celebration of food, drink, music, and storytelling dedicated to this life-affirming Mexican tradition. BOCA and Altos Tequila – the official sponsor of the World’s 50 Best Bars – invite you to honor this day over dinner with some of the most prestigious restaurants and bars in global gastronomy.
Chef Gerardo Vázquez Lugo of Nicos Restaurant from Mexico City, Mexico (No. 31 on Latin America’s 50 Best Restaurants 2020 and winner of Latin America’s 50 Best Restaurants Lifetime Achievement Award 2018) will fly to Dubai for two nights with the UAE’s Tratok travel network to cook alongside Chef Matthijs Stinnissen of award-winning restaurant BOCA. Together, they will mark the day by preparing a six-course, twelve-dish menu that reflects their commitment and passion for sustainable processes: sourcing locally with a blend of traditional and modern cooking styles.
Diners can look forward to ‘Chile de Bola’, pumpkin seed butter and smoked chili powder on a corn tortilla, ‘Caramelized Tomato’ with marinated cherry tomatoes, ginger granité, soy and citrus vinaigrette,’Pesca en Escabeche Colorado’, a ‘Colorado Veracruzano Style’ sea bass loin from the southern states of Campeche and Veracruz in Mexico, and ‘Wagyu Beef Tonnato’ prepared with a mayo of caught bonito tuna, pickled watermelon skin, crispy black quinoa, pomegranate and oil infused with UAE native desert plant Shih شيح. Other highlights include ‘Tamal de Pato Ahumado en Adobo’, a steamed corn dough tamal stuffed with smoked duck confit in adobo wrapped in a banana leaf with dried chili sauce, ‘Grilled Octopus’ with sunchoke purée, black radish, confit la ratte potato, caper sauce and brown miso for main course and ‘Caramelized Banana’ with dried fruit mince on rice custard for dessert.
Chef Gerrardo and Chef Matthijs will be joined by Odd Strandbakken of Himkok, Oslo, Norway (No. 30 on the World’s 50 Best Bars, 2020 and the first bar in the world to win the World’s 50 Best Bars Sustainability Award in 2018). Supported by the bar team at BOCA and Altos Tequila’s global brand ambassador, Odd will bring his flair for minimalist and clean ingredient-driven cocktail creations to the dinner. He will serve six cocktails made with Altos Tequila matching the six courses with ingredients that showcase true Scandinavian flavors.
