Osmari was born in Venezuela and grew up in Colombia, where she developed her love of bartending and hospitality. Yvonne is making a name for herself in the global bar scene with her strong passion for gin, commitment to sustainability, and innovative cocktail creations. She began her career at Ori-Gin Bar and Dr. Fern’s Gin Parlour, where she learned the fundamentals of bartending. Her love of gin led her to The Old Man in Hong Kong, where she quickly rose to the position of head bartender. In 2019, she was named a Rising Star by both The Bar accolades Hong Kong & Macau and Time Out Hong Kong Bar Awards.

In June 2021, Yvonne joined ARGO as head bartender. In this role, she works closely with the team to create an innovative cocktail program that explores the impact of the environment on our dining and drinking experiences. Under her leadership, ARGO has risen to incredible heights, winning the third spot on the list of Asia’s 50 Best Bars and the 28th spot on the list of the World’s 50 Best Bars in 2022. Yvonne is also an active participant in cocktail competitions, where she continues to hone her craft. She is also passionate about sharing her love of bartending with others, and she regularly travels the world to meet with fellow professionals and share ideas.

BOCA, Michter’s, Los Siete Misterios, Farmer’s, and MMI present: BAR TAKEOVER, 7 MIXOLOGISTS in 7 WEEKS.  Extraordinary Dubai Mixologists Take Over BOCA’s Bar

After the success of the 7 CHEFS IN 7 WEEKS series hosted earlier this year, MICHELIN Green Star restaurant BOCA,  and MMI are proud to present a new takeover schedule, this time featuring its DIFC favourite and much-loved bar. 

Called 7 MIXOLOGISTS IN 7 WEEKS, in keeping with the previous series, the event features six of Dubai’s leading talents from The World’s 50 Best Bars, world-class resorts, and award-winning restaurants, in addition to a guest mixologist, a rising star from the world’s bar industry, all the way from Hong Kong.

Each week, and for one night only, a mixologist from this power list will present BOCA’s patrons with a cocktail list that showcases her journey and the culmination of her creativity. Guest mixologists will also honour BOCA’s long-standing contribution to local sourcing and waste reduction. 

The event menu features a cocktail from BOCA and three cocktails from the guest mixologists for AED 45 each. A list of tapas, pinchos, and montaditos from BOCA will also be available during the event, and guests are encouraged to make a night of it and book for dinner.

BOCA is proud to welcome back one of its former bar managers; Laura Duca, the Alchemist of Cocktails.

Laura is a Romanian bartender who has been living in Dubai for the past 12 years. She has worked in a variety of settings, from bustling restaurants to lively nightclubs to small, quaint taverns. What started out as a temporary job turned into a lifelong passion, and Laura has become one of the most respected bartenders in the city.

Laura is a continuous learner and is always looking for ways to improve her craft. She has competed in numerous cocktail competitions, representing Romania on several occasions. She is also a mentor to many young bartenders, sharing her knowledge and experience with them.

Laura believes that cocktails are more than just drinks. They are a form of art, a way to express oneself, and a way to tell stories. Each cocktail that she creates is a work of art, and each sip is an immersive experience.

Laura is a true alchemist, transforming simple ingredients into complex and delicious cocktails. She is a master of her craft, and she is sure to leave a lasting impact on the bar industry.

IRIS ARELY RUANO
Devoted mentor and role model for women in the industry

Iris is a passionate and devoted mixologist who has been working in the hospitality industry for over 15 years. She comes from a family of hospitality professionals, and she learned from a young age the importance of hard work and dedication. Iris started her career in Mexico, working as a receptionist, hostess, and waitress. But it wasn’t until she discovered the world of mixology that she found her true calling. She was fascinated by the different flavors and colors that mixologists could create, and she knew that she wanted to be a part of that world.

She moved to Dubai in 2017, and she has since built a successful career. She is known for her creativity and her attention to detail, and she is always looking for new ways to innovate. She is also a mentor to many young mixologists, sharing her knowledge and experience with them.

Iris is a true inspiration to others, and she is a role model for women in the hospitality industry. She is proof that, with passion and hard work, anything is possible.

May is a globetrotting bartender who is passionate about her craft. She has worked in some of the most prestigious bars in the world, including Nammos, Robertos, Amazonico, and Amman Hotels. She has a philosophy of “traveling the world and basking in the sun” while wholeheartedly serving drinks.

May’s bartending journey has been a constant source of learning and growth. She is always eager to discover new ingredients and techniques, and she is always looking for ways to improve her skills. She is a true artist behind the bar, and she infuses each drink she creates with genuine passion and energy.

What truly sets the bar industry apart for May is the sense of family and care that permeates its essence. She has come to realize that the bar community is united by a strong bond, always looking out for one another. She has participated in numerous competitions throughout her career, and she credits her success to two essential elements: a supportive mentor and an exceptional support system.

To May, crafting cocktails is akin to creating works of art. Every drink is a canvas for her inspiration, and she strives to deliver an exceptional experience to her patrons with each pour and mix. She leaves a lasting impression on everyone she meets, and she is sure to continue to achieve great things in the years to come.

Today, she stands as an adept mixologist renowned for her innovation and unwavering passion.

Shazz’s muse lies in diverse cultures, the tapestry of humanity, and an ardent appreciation for the arts, including music and gastronomy. At BOCA, she artfully blends these influences, crafting cocktails that delight both the palate and the eye.

Sheerin Ghaffar’s honest and authentic approach to cooking has garnered her a sterling reputation as a trailblazing, multifaceted female Chef. Hailed as Caterer ME’s Pastry Chef of the Year 2022; she embraces the challenges of using local and seasonal ingredients to captivate the taste buds in a unique way while not having the ability to taste her own creations. With a distinguishable flavor profile that has been refined by her worldly travels and her Singaporean Chinese-Pakistani roots, she is best known for being a believer in the power of simplicity. Recently joining the 1* Michelin Starred restaurant; ‘Hakkasan’ Dubai, she plans on diving deeper into her own Chinese culture and heritage for new inspiration and creations.

BOCA INTRODUCES A ‘TASTE OF SPAIN’ MENU FOR IFTAR THIS RAMADAN

BOCA is delighted to welcome Chef Patricia Roig to lead its kitchen this Ramadan, presenting guests with a special Iftar menu inspired by her Spanish heritage. The menu features entirely new dishes, starting with welcome mocktails, freshly baked bread, homemade butter, traditional soup, and dates. This welcome spread is then followed by a selection of five hot and cold sharing starters, individual hearty mains, sides, and desserts.

Some of the standout dishes on the menu include Spanish Puchero, a traditional soup made with chicken, beef shank, and fresh mint; Escalivada, consisting of smoky grilled vegetables and Burrata cheese; Axarquía Salad, made with confit cod, potato, and olives; and Flamenco Eggs.

For the main course, diners can choose between the Roasted Lamb, featuring honey and rosemary glazed lamb shoulder with beetroot and herbs, or the Chicken Orzo served with creamy saffron orzo, artichokes, and a vegetarian Baked Celeriac with rocket and dates, accompanied by vegetarian gravy. The meal concludes with traditional desserts such as caramelized Torrija, lemongrass and vanilla cream, and sugar and honey Pestiños.
