BOCA and Matusalem, official partner of The World’s 50 Best Bars, are proud to host a bespoke paired dinner celebrating the launch of the unusual and rare Matusalem Insólito rum in Dubai.
Diego Ferrari, Global Rum Barista and one of the 100 most influential people in the bar industry 2020 by Drink International; Hektor Monroy, Matusalem´s Consumer Experience Global Head, and former Beverage Director for Mauro Colagreco (Chef of Mirazur, best restaurant in the world by the World’s 50 Best Restaurants); and BOCA´s Head Chef, Matthijs Stinnissen; designed a menu of dishes that creates a perfect food pairing with wines and Matusalem rums. The team used scientific methods backed by Foodpairing® to identify ingredients that work together to make up this unique dinner experience.
Three courses and six dishes including Hokkaido Scallop Crudo with green gazpacho, yuzu and labneh mayo, Japanese Saroma Wagyu Tonnato with crispy black quinoa, and 12-Hour Braised Lamb with arroz Bomba, black truffle, and pickled shimeji are precisely paired with three wines and three Matusalem rums including Insólito, the first rose rum aged in Tempranillo wine barrels. The superstar ensemble of Diego, Héktor and Matthijs will guide the pairing through the night and use their specialty tools of cane machetes, pipettes, and wooden barrels to serve guests.
